Hogweed ((Heracleum sphondylium)) is so named because it was used as fodder for pigs. It is quite tall, and a common wild flower belonging to to the umbellifer family, found by streams and ditches, in fields and in woods. At the right time in its life cycle, and with the right treatments, the leaves, roots and stems can all be used as food. In addition, the leaf stems can be tied in bundles and dried in the sun until they turn yellow, when a sweet substance resembling sugar forms on the dried stems. This is considered to be a great delicacy. Be aware, however, that hogweed is not the only white umbellifer that flourishes beside streams. Others such as hemlock and water drop hemlock are extremely poisonous.
