The Onoto, is a tree that practically grows throughout the Caribbean, Central and South America. Of large pink flowers similar to wild roses, the Onoto encloses among its seeds (hidden within its scarlet armored prickly fruits) a great commercial importance. All Indigenous groups, mainly the Caribbean, used dye to paint their bodies; It was also used by the ancient Maya in Guatemala.\n\nIn the kitchen of the Caribbean and Latin America it is mainly used as a dye, but also as a mild condiment. The onoto was introduced in the Philippine Islands by the Spanish and since then it has become an important ingredient of many dishes.\n\nIn Europe it is used to color many cheeses, including Munster, Livarot, Leicester and Red Cheshire. The onoto has several names that vary from island to island and from country to country. Some of them are: Annato, Bija, Bijol, Achiote and Roucou, among many others.

Mahonia japonica is an evergreen shrub, which has been extensively cultivated in Japan and is commonly called Japanese mahonia, although it is native to China. Fragrant yellow flowers in loose, spreading to pendant racemes bloom in late winter to early spring (March-April). Flowers are followed by ornamentally attractive grape-like bunches of small waxy fruits which mature to blue-black in late spring to early summer.
