Amaranthus tricolor, commonly called Joseph’s coat, is grown not for its flowers but for its beautifully colored foliage. It is an upright, bushy annual that typically grows to 2-4’ tall. Species plants feature ovate to elliptic, green to purple leaves. However, a number of cultivars are available in commerce featuring leaves brilliantly blotched with various shades of yellow, red, pink and/or copper, with the upper plant leaves often contrasting in color from the lower ones. Green-leaved species plants are sometimes grown as a vegetable crop (spinach substitute).[Missouri Botanical Garden]

Amaranthus tricolor is an ornamental plant and, although native to South America, many varieties of amaranthus can be found across the world. The leaves are edible as a salad vegetable as well as stems.
Celosia - Wood flowers
Celosia is an annual plant that blooms brightly colored flowers in summer. The plant height varies depending on the variety, and large ones grow to nearly 2m. It has a wide variety of flower colors and is easy to grow, so it is often used for flower beds and potted plants. It is also popular for use in flower arrangements and as dried flowers.
Amaranthus caudatus is a species of annual flowering plant. It goes by common names such as love-lies-bleeding, pendant amaranth, tassel flower.\nMany parts of the plants, including the leaves and seeds, are edible, and are frequently used as a source of food in India and South America. This species, as with many other of the amaranths, are originally from the American tropics. The exact origin is unknown, as A. caudatus is believed to be a wild Amaranthus hybridus aggregate.\nThe red color of the inflorescences is due to a high content of betacyanins, as in the related species known as \
